Introduce 

If kwati ko jhol is to be explain as a newari cuisine, it is eaten especially on the day of janai purnima (Hindu festival). In the newari community, kwa means hot and ti means liquid. In the Newari community, they eat kwati jhol. Similarly, in sudurpachim of Nepal, it is customary to soak gaura (Hindu festival) mix beans for 3 days and fry it in oil on the last day of gaura festival.


In the newari community, kwati ko jhol is said to eliminate year-round fatigue. kwati ko jhol provides all the nutrients our body needs. Such as; Protein, fiber, vitamins, calcium and many other nutrients, etc. kwati is especially good for growing children. But it can be harmful for patients with joint pain.


Where it is found? 

kwati ko jhol is very rarely found in hotels and restaurants in nepal. It can be said that you don't get it. But it is available in 5star, 3star hotels in Nepal.


kwati ko jhol mix is ​​made from beans sprouts so it benefits our body a lot. It is also a traditional food of a newari community. This food is eaten especially as a culture. kwati ko jhol is very rare in western Nepal.In the western part of Nepal, kwati ko jhol is not available, but in that place, on Sudurpachim's own gaura festival, it is customary to soak the mixbeans sprout in water for 3 days and fry it in oil on the last day of gaura festival.


 

Note:You have to soak the mix beans sprout in water for 3 days or at least 1 day before making it.

Some ingredients you need to make kwati ko jhol as followed;


S. N.             Ingredients/Quantity 

1.                   Mixbeans sprout(soaked for at                        least 3 days) (300gm) 

2.                   Oil(15ml) 

3.                   Chop tomato(100gm) 

4.                   Shredded ginger(5gm) 

5.                   Chop chilli(3-4) 

6.                   Chop coriander(10gm)

7.                   Chilli powder(3gm) 

8.                   Turmeric(3gm) 

9.                   Coriander powder(5gm) 

10.                 Curd(100ml) 

11.                 Salt(to taste)


Cooking method of kwati jhol

1) Wash beans properly and blanch, put again for boil with cup of water. 

2) Heat oil Saute tomatoes and ginger, add chilli and spices. 

3) Mix in beans

4) Thin curd in 1 cup of water. 

5) When beans are done mix in curd simmer for 2-3 minute. You kwati jhol is ready😊


In Nepali style cooking method of kwati ko jhol:

Now you put the mixbeans in the pressure cooker. Then add water as much curry as you want. Now add salt, turmeric (3gm) and a little oil to taste and mix well. Then put the lid of the pressure cooker on medium to high heat and apply 2-3 whistles. Turn off the gas after 2-3 whistles.


Now heat the butter in a separate sauce pan. Then fry 1/3 cup cumin seeds in it. After frying cumin, add chop tomatoes, chop onion and fry it well. Once it is well fried, add ginger, garlic paste. After frying all these ingredients, add the pre-made mix beans. Then add chop chilli, chop coriander powder, chili powder, turmeric and stir well. Now cook it well. Then if you have green coriander, you can chop it and add it. When it is well cooked, it is ready to eat.
