Yellow laping/laphing
Yellow laping/laphing is popular nepali food. Laping tends to be of many kinds. Yellow laping is yummy and delicious food. It can be eaten in both winter and summer seasons. It is also a very spicy food. It is very popular among Nepali people.

Yellow laphing recipe requires flourstarch. For that we have to make starch first. So we will make starch first.

Step 1
How to make starch?
First take flour and add water and mix well. (When making flour, knead like wheat flour.) Do as given below.

Put in a bowl after mixing. Then add a little water.
And mashed it well by hand. As you mashed it, the starch in comes out. After mixing for a while, put the water in a separate bowl. The flour that survives after separating from the water is called gluten. This gluten is used as stuffing to make laping. It still contains a lot of starch in gluten. So remove the starch again using the previous procedure. In the same way, put starch water in a container with starch water first. Cover the water for 4 hours (do not shake it for 4 hours). This way the starch is released. Starch is the white part at the bottom and the water at the top.

Now rinse the gluten we made earlier with water thoroughly. It is as flexible as rubber. Now squeeze it well and put it in a bowl. Now add half tsp yeast in it. And mix well. (It doesn't matter if you don't have a yeast). After mixing well, cover it for half an hour. After covering for half an hour, put it in a separate bowl. Now steam it for 20minutes. After steaming for 20min, take it out and check once it is cooked. (Press it with your finger from above to see if it is ripe. If it is spongy, it is ripe. 2-3 minutes after removing it from the steam, cut it into long slices first (this is bit spongy). The stuffing is ready for our laping.
Step 3
Now we will make chilli sauce.
For this we need the following ingredients.

1. Chilly flakes (3 spoon)
2. Ginger(1 pice)
3. Star anise and bay leaf ( 2 anise,3bay leaf)
4. Pepper(1sp)
5. Salt as per taste
6. Oil (100ml/half cup)
Now put the chilly flakes in a large bowl. Then add salt and mix. Take a pan and heat the oil. Add star anise and bay leaf, pepper, ginger pieces and fry in hot oil (keep flame on medium level). After frying it all, just filter the oil and add it to the previous chilly flakes. Now mix it. Now your chilly sauce is ready.
Step 4
Now we will make lapping sauce.

1) Chopped spring onion (1)
2) Ginger garlic paste(little)
3) Soy sauce(3sp)
4) Sesame oil(3 sp)( use any kind of oil if you don't have sesame oil)
5) Black vinegar(2sp)
6) Chilly sauce(2sp)
7) Salt (little)
8) Fried sesame(1 spoon)
Now take a bowl. Put chopped spring onion in the bowl. Now put a little ginger garlice paste in it. Now add all the above ingredients and mix. Now the lapping sauce is also ready.
Step 5
Now we will make yellow noodles.
Now discard the water from the starch and water separator for 4hours. After throwing the water, stirring the remaining starch. After stirring well, add a little food color (red) and mix well.mix well like this.

Now take a plate. Apply oil on top of the plate. Now add 2-3 big spoon starch mix and steam it for 3-5 minutes. Remove after steaming for 4-5 minutes. And leave it to cool for 3minutes. Once cool, apply oil from above with a brush or by hand. Now gently remove the steamed starch from the plate with a small spoon or hand and put in a separate plate.
Now your yellow noodles is ready. In the same way, make as much as you need.
Final step
Now take a baked yellow noodles and add 1sp chilly sauce and a little salt (less than per taste) and spoon all around.

Now put the gluten we made in the middle of it and roll it well. After rolling well, cut it into small pieces with a knife. And put this cut lapping in a bowl.
This is called dry lapping (you can eat it anyway). Now pour the previously made lapping sauce over it and enjoy eating it.
