Farsi ko munta or pumpkin leaves/pumpkin green shoots is eaten especially with roti or rice. It is eaten everywhere in Nepal. This vegetable is very tasty.
Today I am going to teach you how to make farsi ko munta vegetable with potatoes. If you do not like potatoes, you can avoid them.

First you need some ingredients as follow for making this vegetable.
S.N. Ingredients/Quantity
1. Pumpkin Shoots(farshi ko munta) ( 300gm)
2. Potato (remove peels and cut into dice) (2)
3. Oil (100ml)
4. Salt
5. Cumin powder (1 spoon)
6. Coriander powder (1spoon)
7. Dry chilli (2-3)
8. Onion (cut into Julienne)
9. Ginger and garlic (cut into dice) (2-2spoon)
10. Fenugreek powder (half spoon)
11. Turmeric powder (half spoon)
Note: You can also use the quantity of ingredients and ingredients according to your own.
Cooking method of farsi ko munta or pumpkin leaves/pumpkin shoots
Now first we will remove the outer layer of Pumpkin greens/Shoots(farshi ko munta). For this, one by one, take Pumpkin Shoots(farshi ko munta) and remove the outer layer. After removing the layer, cut it into small size. Then rinse it thoroughly with water.

Now take a pan and heat oil in it. Then add fenugreek and fry fenugreek. Then add dry chilli and fry. Then add ginger and garlic and onion and fry it all well. (If you are cooking without potatoes in the Pumpkin Shoots/farshi ko munta, do not use onion.)
Then add turmeric and potato in it and cook while stirring well. Cook the potatoes for about 50% at a time. Then add green pumpkin green/shoots(farshi ko munta) and cook while stirring. Now add salt, coriander powder, cumin powder.
Mix it all well. Cover and cook on low flame for about 5 minutes. After 5 minutes, remove the covered in a pot and check if it is cooked (check whether the potato is cooked or not). If not cooked, add a little water and cook for a while. Once cooked, you can eat or serve it. Especially Nepalese people eat it with rice and roti (Nepali food).
